Ok, so last night I made a great stir fry with udon noodles (something neither hubby nor I had before) and I took pics, but they are stuck in the camera because I can’t find the cord. I promise when I do, I’ll post them because it really does look yummy.
As I type this the meat and veggies for tonights fajitas are marinating in the fridge. This time I’ll use the memory card so I don’t have to worry about having my pics held hostage again.


Herbed pork

Ok so maybe in my life I’ve been overthinking again. Cooking has so many steps, so complicated, time consuming, etc. Or not, as I discovered last night while eating dinner and then looking back at my previous posts.
Dinner last night was so simple that I felt like I had nothing to do. We had herbed pork loin (from the current issue of Clean Eating mag), “planned over” baked lemony rice and steamed green beans. The most complicated thing I had to do (besides working the microwave) was to toss all the herbs and garlic in a blender with some olive oil and whirl away, then spread over the pork loin and roll up in plastic until it was ready to go in the oven.
So someone share with me again, why did I think cooking healthy was hard? Or not good tasting? Even hubby is oooing and ahing and admitting that after just a normal serving of food he’s full. (now that is a feat!)
I guess my next move is to get on to other meals as I’ve only made dinners healthy so far. Lunches here I come!
